Experience the authentic essence of Georgian wine with the Winiveria Saperavi, a dry red wine with roots in the heart of Kakheti, a region renowned for its ancient winemaking traditions. Thanks to the ideal climate and fertile soil, this area produces grapes of exceptional quality. The Winiveria Saperavi is made from the Saperavi grape, a historic and iconic variety that symbolizes Georgian viticulture. What makes this wine special is the traditional winemaking process. The grapes, including the skins, stems, and seeds, are fermented in Qvevris, large clay or earthenware vessels buried underground. This fermentation lasts for about two weeks, with the wine being stirred by hand daily to optimally develop its flavors. After this fermentation period, the wine matures further, first in the Qvevri and then in oak barrels, contributing to the refined taste and texture of the wine. The end result is an unfiltered wine of outstanding quality, which has proven its exceptional character by winning the highest awards at the Georgian National Wine Competition. With an alcohol content of 12.5%, the Winiveria Saperavi offers a full, rich flavor that is both complex and deep in character, and a true delight for wine enthusiasts.

Winiveria Saperavi is a powerful dry red wine. With its deep ruby red color, this wine immediately grabs attention. The aroma reveals an intense bouquet of ripe cherries and dark berries, perfectly balanced with the earthy, robust notes characteristic of the Saperavi grape. This combination makes the wine both rich in flavor and surprisingly complex, with each sip offering a new discovery.
With its versatility and depth, Winiveria Saperavi is an excellent choice for dishes with rich flavors. The wine pairs particularly well with grilled meats, from a juicy steak to the traditional Georgian Mtsvadi, and also complements other savory meats. The wine's bold character elevates the flavors of the meat, while its subtle earthy notes beautifully enhance the dish.
To experience the full potential of the Winiveria Saperavi, we recommend serving the wine between 16-18°C. At this temperature, the complex aromas and flavors are fully expressed, revealing the wine's perfect balance of power and finesse. It is the ideal companion for a special dinner or for those looking to enjoy an authentic Georgian wine with character.

Winiveria is a prominent winery with a deep-rooted history and an unwavering commitment to the traditional art of Georgian winemaking. The journey began in 2005, when the first Marani (wine cellar) was established in the picturesque village of Vardisubani, located in the heart of Kakheti the region renowned worldwide as the center of Georgian wine tradition. In 2006, Winiveria completed the construction of this cellar and initiated the first Rtveli (grape harvest), laying the foundation for the production of authentic Georgian wines. The winery specializes in the use of Kvevri, the ancient Georgian method of winemaking in clay pots, while combining this with modern European techniques to create a wide range of wines.
In 2008, Winiveria began the construction of Chateau Mere, one of the first chateaus in Georgia, which was completed in 2011. Since then, it has become a popular destination, beloved for its hospitality and the unique experience of wine tasting. In 2014, the production capacity was further expanded with a new modern winery next to Chateau Mere, increasing the range to 15 exceptional wines that embrace both traditional Georgian and classic European production methods.
