This grape variety primarily thrives in the Kartli region, which contributes to about 15% of Georgia’s total wine production. Located on the plains around Tbilisi, the vineyards benefit from a mild climate with dry, warm summers, contributing to the development of the grapes' rich flavor profiles. The Shavkapito grapes undergo an initial fermentation period of 7 to 10 days in qvevris, with the skins involved. After this initial fermentation, the skins are removed, and a malolactic fermentation follows, lasting about 15 days. The wine is then aged for another 6 to 8 months in qvevris, resulting in a refined wine with an alcohol content of 12%.
