After completing his studies, the young Russian Alexey Sapsay moved to Armenia to become the winemaker at Voskevaz Winery. There, he rediscovered the Karas (known as Qvevri in Georgian): large earthenware amphorae traditionally used by Armenians, much like the Georgians, for winemaking. The Karas are buried in the winery's cellar. Grapes, including their skins and seeds, are placed inside to ferment. During the communist era, the Karas fell into disuse as quantity, rather than quality, became the priority. Alexey discovered some ancient Karas at the winery and with small local farmers in the area. He had them cleaned and has been using them to make wine since 2015. Although production is currently small, it is expected that the production of Karas wines at Voskevaz will significantly increase in the coming years.
