The grapes are hand-picked at the moment of optimal ripeness, then carefully destemmed and crushed. Fermentation takes place in stainless steel tanks at a controlled temperature between 23 and 28°C. Thanks to the selection of specific yeast strains, the natural aromas of the grapes are preserved. Traditional techniques such as délestage and remontage are applied during the vinification process. The skins are regularly submerged and pumped over, which creates a deep, complex flavor. After a maceration period of 5 to 7 days, the fermentation process is halted by cooling once the desired level of residual sugar is reached. This preserves the wine's natural sweetness and fresh liveliness. To maintain elegance and freshness, the wine is stored at a low temperature of 0°C until bottling. With an alcohol content of 11.5%, Telavi Marani Kindzmarauli offers a harmonious balance between sweet nuances and a refreshing finish.
