The grapes are hand-harvested, with only the ripest and healthiest specimens selected, resulting in a wine of exceptional quality. After harvest, the grapes are carefully destemmed, pressed, and undergo a controlled fermentation process. During this process, the new wine, also called matchari, is cooled to preserve the natural sugars, giving the wine a subtle sweetness. The low fermentation temperature preserves the fresh, fruity character of the Saperavi grape, ensuring a round and refined taste. With an alcohol content of 13%, the Koncho Kindzmarauli strikes a beautiful balance between strength and softness, offering a true sensory experience. The company is dedicated to creating and selling wines of exceptional quality, honoring the ancient Georgian winemaking traditions. The name "Koncho" is derived from an Old Georgian word meaning "cross" and forms the basis for the family name Konchoshvili. This family has been involved in winemaking since 1737, and it was Kakhaber Konchoshvili, the court winemaker of King Teimuraz II of Kakheti, who established a winery at that time specializing in traditional Kakhetian wines and chacha, the famous Georgian brandy. This winery remained active until the end of the twentieth century and was originally located in the village of Sabue, later moved to Kvareli.
