These vineyards benefit from the island's Mediterranean climate and limestone-rich soil. The grapes are hand-harvested at optimal ripeness to ensure their full flavor and aromatic potential. After crushing, the juice undergoes fermentation in temperature-controlled stainless steel tanks. This step ensures a balanced expression of the grape's natural fruity and spicy flavors. The wine is aged for a short period in oak barrels, which imparts subtle hints of wood, leather, and spice, while allowing the fruit-forward character to remain prominent.
